A recipe from Adrian Pike of Westwell Wines in Kent. Just like this experimental winemaker, his version is a slightly more maverick take on the traditional Le Bicyclette . The beauty of this cocktail is that it is incredibly simple and forgiving with ratios and serving glass.
Ingredients
2 parts Westwell Ortega (any dry aromatic white would do)
1 part Campari
Method
1. Add a couple of chunks of ice to a cold glass (we use the classic bistro tumblers, or a stout, squat wine glass)
2. Pour in Campari and top up with Ortega
PS: Adrian usually pairs this cocktail with plain crisps and taramasalata.
