Brought to us from Ambriel Sparkling, one of my favourite sparkling wine producers in the UK, based in West Sussex, this celebratory cocktail is an adaptation of a Sophie Dahl cocktail.

It's all about combining wit, wisdom and a lot of patience in order to create their 'ebulliently English' sparkling wines.
The Blushing Bride
Ingredients
- Lime
- Ambriel Classic MV (English Sparkling wine)
- Rose petal
- Rose syrup: Buy good quality rose syrup or better still make your own (see below)
Homemade rose syrup:
Choose fragrant dark petalled roses which have not been sprayed with anything (Wendy uses her estate rose - ‘Wild Edric’)
- 1 cup of white sugar (brown sugar makes the syrup a bit brown)
- 1 cup of water
- Petals from three roses
Heat the water in a pan. Dissolve the sugar in it. Add rose petals. Simmer for 15 minutes. Remove from the heat and let cool. When cool strain into a sterilised bottle. This will keep in the fridge for weeks.
Method
- Pour chilled Ambriel Classic MV into coupes
- Drizzle the rose syrup gently around the sides, allowing it to trickle down to the bottom. Do this to taste (be careful! It can go from delectable Turkish delight to hand soap very quickly). Two teaspoons should be enough, but it depends on the concentration of your rose syrup
- Spritz with a little lime (a tiny spritz of lime should be enough)
- Decorate with a perfect organic rose petal and grated lime
